We respect the locality in Apaja's kitchen. We make first-class tasty food, ourselves, by hands from the pure raw materials of the farms and suppliers in Central Finland. We want to take advantage of different manufacturing methods, such as charcoal, smoking and open fire.
The Smokehouse table is part of Apaja's classic menus and our guests have been able to enjoy this delicious table for a long time.
Here at Savutuvan Apaja, the smoked foods in our menus are prepared outdoors with an open fire.
Alder, known for the mellow edge it lends to the taste, is the primary choice of wood for smoking. We often add some twigs and juniper to the wood for added aroma.
A touch of smoke, a taste in the main course of this menu, is also present in the vendace.
